Champagne Origin Print

The vineyards cover 4.2 hectares in the Montagne de Reims, region of the Premiers Crus of Champagne. The use of the Chardonnay and Pinot Noir grape varieties are proportioned 65% Chardonnay and 35% Pinot Noir.

Once the grapes are pressed, the juice is put into tanks, where it undergoes a first fermentation lasting two to three weeks. The wines produced are clear and still. They are then drawn off and in January the assembling (or blending) begins. We then compose our four Cuvées: Cuvée Tradition - Cuvée Prestige - Cuvée Rosé - Cuvée Blanc de Blancs.

When the blending is complete, the wine bottles are laid down in the cellars and for six to nine weeks and the wines undergo a second fermentation in the bottle, called the "prise de mousse". The carbon dioxide gas given off is dissolved in the wine, creating the lively bubbles.

Following the second fermentation, the wine is aged for varying periods, depending on the blend. This enables the champagne to acquire complexity and develop its aromas.

The champagne is then ready for "remuage", a skilled process of turning the bottles, in order to collect the sediment on the cork. This sediment is later disgorged.

Finally, comes the "dosage", the addition of a variable amount of sugar dissolved in wines from the reserves. The bottles are then corked, capsuled, labelled and ready to enjoy.

  • Rosé Our Rosé is characterised by its suppleness and roundness (assembled with a small proportion of red wine of champagne). You will enjoy it during the course of your meals. This champagne brings a delicate note.
  • Blanc de Blancs Exclusively composed with Chardonnay grapes, this champagne is a perfect aperitif. It also has special affinity with fish and shellfish. Fresh and elegant Champagne, it has a great aromatic persistence.
